To Drink: Strawberry Moscow Mule-

Ditch the champagne! If you’re already ditching the expensive dinner out, be creative and serve up an even better cocktail for all to enjoy! The tangy citrus and fun little strawberry hearts are sure to get your night off to a great start!

What You Need:

  • 1.5 ounces vodka (1 shot)
  • 1.5 ounces strawberry soda (get the sweet stuff!)
  • 1/2 of small lime
  • 8 ounces ginger beer
  • strawberries and lime slices for garnish (optional)

What You Do:

  1. In a copper mug or tumbler, add ice.
  2. Pour in vodka, strawberry soda, juice of 1/2 lime and ginger beer.
  3. Cut strawberries to look like little hearts (optional but FUN)!
  4. Stir to combine, serve cold.

For Starters: Valentine’s Day Caprese Salad-

What You Need:

  • Fresh mozzarella
  • Tomatoes
  • Fresh basil
  • Heart-shaped cookie cutter/a knife to cut the shape
  • Good quality extra virgin olive oil
  • Good quality balsamic vinegar
  • Sea salt
  • Freshly ground black pepper

What You Do:

  1. Cut the mozzarella into 1/4” thick slices. Use a cookie cutter to cut out heart shapes from each slice or use a knife to cut the shape.
  2. Slice the tomatoes into 1/4” thick slices.
  3. Layer the mozzarella, tomato, and basil on a platter however looks best to you.
  4. Drizzle with olive oil and balsamic vinegar.
  5. Sprinkle with sea salt and freshly ground black pepper. Enjoy!

The Main Course: Heart Shaped DIY Pizza-

There’s nothing quite as fun or romantic as doing a little design your own pizza! This is a pretty simple “recipe”. We suggest heading over to the grocery store to pick up some pizza dough, then grabbing whatever toppings you like from pepperoni to bell peppers– you name it. A necessity is cutting the pepperonis to look like little hearts, and shaping the dough as a heart as well to be festive! This one is all up to you for creativity… Once you have rolled out your dough and added your toppings, pop the pizza (or pizzas) into the oven at 450 degrees for 10-15 minutes or until you see the crust is browning! Enjoy!

Make Some Boiled Peanuts!

This is a true southern staple and has been consumed since the 1800’s. Unsold peanuts would be prepared, extended families and neighbors would gather to share conversation.  Today, boiled peanuts are still found at most southern social gatherings! The perfect appetizer for a Low Country Boil or an Oyster Roast.

Southerners will tell you boiled peanuts should always be accompanied by a beer, sweet tea, or a soft drink. Traditionally they are eaten outside where it doesn’t matter if wet shells are tossed or spit  on the ground.

To make them you will need a large pot.  Green or raw peanuts are the best to use.  For every pound of raw peanuts, you will need a gallon of water and 1 cup of table salt. Wash the peanuts until the water runs clear, put all the ingredients in the pot and bring to a boil.  Turn the burner down to a medium simmer for about four hours.  Check the pot every hour, adding more water and salt as needed. At the 3 hour mark, check one for doneness.  The peanut inside the shell should be very soft.  Continue to cook and check every half hour.

You can add some additional seasonings  in the pot at the beginning, such as Old Bay, Cajun seasoning or  chili powder.
