South Carolina and three other states will end a moratorium on Red Snapper fishing that has been ongoing since 2010 in the hopes that recreational anglers will donate carcasses of the popular fish for a study. One of the fish collection sites will be here on Hilton Head Island at the Skull Creek Boathouse. There will not be any size limits on catches this weekend. The moratorium will be lifted only for a limited time — Friday through Sunday — in South Carolina, North Carolina, Georgia and Florida. Red Snapper has been a very popular fish as they have a great, firm texture and a sweet, nutty flavor that lends itself very well to everything from hot chilies to subtle herbs. And, of course, Red Snapper is excellent for grilling.
